Prepare chouriço and aromatics

Remove the chouriço from its casing and finely chop or grate it. Heat 2 tbs unsalted butter in a medium skillet over medium heat until foaming. Add the minced onion and sauté 4–5 minutes until translucent and soft, scraping up any browned bits.

Cook chouriço

Add the chopped chouriço to the skillet and cook 3–4 minutes until it has released some fat and is slightly caramelized. If the chouriço is very fatty, drain off excess fat, leaving about 1 tbs in the pan to build the roux flavor.

Make roux and béchamel base

Reduce heat to medium-low. Sprinkle 3 tbs flour over the onion-chouriço mixture and stir continuously for 1–2 minutes to cook the raw flour taste, creating a roux. Gradually pour in the warm milk while whisking to avoid lumps. Continue cooking, stirring frequently, until the mixture thickens into a smooth, firm paste (like thick mashed potato), about 4–6 minutes.

Season and bind

Stir in 2 tbs chopped fresh parsley, 1/4 tsp grated nutmeg, 1/2 tsp salt and 1/4 tsp black pepper. Taste and adjust seasonings. Cook another 1 minute to integrate flavors. Remove from heat and transfer the mixture to a shallow dish. Cover with plastic wrap pressed onto the surface to prevent a skin. Chill in the refrigerator until firm, at least 2 hours (or up to overnight).

Form croquetes

Once the mixture is thoroughly chilled and firm, divide it into 4 equal portions. With lightly floured hands, shape each portion into a small cylinder or oval about 2–3 inches long and 1 inch thick. Set aside on a tray.

Bread the croquetes

Set up a breading station: a shallow bowl with 1/2 cup flour (for dredging), a bowl with the 2 beaten eggs, and a bowl with 1 cup fine breadcrumbs. Dredge each croquette first in flour, tapping off excess, then dip into beaten egg, letting excess drip off, and finally coat thoroughly with breadcrumbs. For a crispier crust, press the breadcrumbs on gently and repeat the egg and breadcrumb step once more (double breading). Place breaded croquetes on a tray and chill 15–20 minutes to set the coating.

Fry croquetes

Pour vegetable oil into a heavy skillet or frying pan to a depth of about 1/2 inch (approx. 300 ml) and heat to 170–180°C (340–355°F) — oil should shimmer but not smoke. Fry croquetes in batches, 2–3 minutes per side, turning carefully with tongs, until golden brown and heated through (internal filling should be hot). If necessary, finish in a 180°C (350°F) oven for 3–4 minutes to ensure the center is hot without overbrowning. Drain on paper towels briefly.

Make the herb butter

While the croquetes chill, combine 60 g softened unsalted butter with 1 tsp herbes de Provence, 1 minced garlic clove (optional), 1/4 tsp sea salt and 1/8 tsp freshly ground black pepper. Stir in a pinch of chopped parsley if desired. Taste and adjust salt/herbs. Transfer the butter to plastic wrap, form into a small log if desired, and chill until slightly firm but spreadable.

Warm and toast bolo do caco

Slice each bolo do caco in half horizontally if not already portioned. Brush cut sides lightly with 1 tsp olive oil. Heat a grill pan or skillet over medium-high heat. Place bread cut-side down and toast 1–2 minutes until grill marks appear and the bread is warm and slightly crisped. Alternatively, warm in a 180°C (350°F) oven for 4–6 minutes.

Spread herb butter

Remove bread from heat and immediately spread a generous amount of the herb butter on the warm cut surface so it melts into the bread. Keep warm while finishing croquetes.

Assembly & finishing

Place two croquetes on each piece of buttered bolo do caco (or serve 4 croquetes across 4 halves as described). Garnish with a sprinkle of chopped fresh parsley and serve with lemon wedges on the side for squeezing over the croquetes, if desired.

Serve immediately so the croquetes are crisp and the bolo do caco is warm and buttery.
