Chill glass

Place a highball or Collins glass in the freezer for 5–10 minutes or fill it with ice water while you prepare the cocktail to chill it.

Measure spirits and mixers

Measure 2 oz blanco tequila, 1/2 oz Aperol, 3/4 oz freshly squeezed lime juice, and 1/2 oz agave syrup into a cocktail shaker.

Add ice and bitters

Add a handful of ice cubes to the shaker and 2 dashes of orange bitters. This helps chill and slightly dilute the mixture for balance.

Shake

Secure the shaker lid and shake vigorously for 8–12 seconds until the shaker feels cold to the touch and the exterior is frosty.

Prepare serving glass

Remove the chilled glass from the freezer or discard the ice water. Fill the glass with fresh ice cubes to the top.

Double strain

Double-strain the shaken cocktail over the fresh ice in the serving glass using a Hawthorne strainer and a fine mesh strainer to remove small ice shards and pulp.

Top with soda

Gently pour 2 oz chilled club soda down the side of the glass to preserve carbonation. Give the drink one or two gentle stirs with a bar spoon to integrate without flattening.

Garnish and finish

Express the oils from an orange wheel or twist over the drink by holding it skin-side down and giving it a quick squeeze. Drop the wheel or twist into the glass and optionally slap a fresh mint sprig once to release aroma and place it as a garnish.
