Chill glass and ingredients

If possible, place a large wine glass or rocks glass in the freezer for 5–10 minutes or fill it with ice and cold water while you prepare other items so the drink stays cold longer. Ensure Prosecco and club soda are well chilled.

Add ice

Fill the chilled wine glass about three-quarters full with fresh ice cubes. Using plenty of ice keeps the drink properly cold and preserves the effervescence.

Pour Aperol

Measure and pour 3 oz Aperol over the ice. Pouring first helps the Aperol settle and makes it easier to build the drink.

Add Prosecco

Slowly pour 2 oz chilled Prosecco into the glass. Pour gently down the side or over a bar spoon to retain bubbles and create a layered look.

Top with soda

Add 1 oz chilled club soda to top the cocktail. Adjust soda up to 1.5 oz if you prefer a lighter, less sweet spritz.

Stir gently

Give the drink one or two gentle stirs with a bar spoon to integrate ingredients without knocking out too much carbonation.

Garnish and serve

Garnish with one fresh orange slice placed on the rim or floated in the drink. Optionally add a green olive or a twist of orange peel. Serve immediately while effervescent.
