    Prepare the Poaching Liquid

    In a large pot, combine 4 cups of water, the juice of the lemon (cut in half), bay leaves, black peppercorns, and salt. Bring to a boil over medium-high heat.

    Poach the Shrimp

    Once the water is boiling, add the shrimp to the pot. Cook for 2-3 minutes or until the shrimp turn pink and opaque. Remove the shrimp from the pot and place them in a bowl of ice water to stop the cooking process.

    Make the Cocktail Sauce

    In a separate bowl, mix together the ketchup, horseradish, Worcestershire sauce, lemon juice, and hot sauce. Adjust the hot sauce to your preference.

    Serve

    Drain the shrimp from the ice water and arrange them on a platter with the cocktail sauce in the center. Serve chilled.
