Prepare the Ponzu Sauce

In a small bowl, mix together soy sauce, rice vinegar, mirin, and lime juice to create the ponzu sauce. Set aside.

Prepare the Tuna

Trim the Ahi tuna steak of any sinew and season with salt and black pepper. Press sesame seeds onto all sides of the tuna to create a crust.

Sear the Tuna

Heat olive oil in a skillet over medium-high heat. Once hot, sear the tuna for about 30 seconds on each side for rare (adjust time if you prefer it cooked more). Remove from heat and let it rest for a minute.

Slice the Tuna

Using a sharp knife, slice the seared tuna into thin slices, about 1/4 inch thick.

Serve

Arrange the sliced tuna on a plate, drizzle with ponzu sauce, and serve with pickled vegetables on the side.
