Prepare the Balsamic Reduction
In a small saucepan, combine balsamic vinegar and honey. Bring to a simmer over medium heat and let it reduce until thickened, about 10-15 minutes. Remove from heat and let cool.

Make the Herb Oil
In a small blender or food processor, combine fresh basil leaves and olive oil. Blend until smooth. Set aside.

Prepare the Mozzarella
Cut the fresh mozzarella into thick slices, about 1/2 inch each. Pat them dry with paper towels to remove excess moisture.

Set Up Breading Station
Place flour in one dish, beaten eggs in another, and panko breadcrumbs mixed with salt and pepper in a third dish.

Bread the Mozzarella
Dip each mozzarella slice first in flour, then in the beaten eggs, and finally coat with panko breadcrumbs. Ensure each piece is evenly coated.

Fry the Mozzarella
In a deep skillet, heat oil over medium-high heat. Fry the breaded mozzarella slices in batches until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Serve
Drizzle the herb oil over the fried mozzarella slices and drizzle with the balsamic reduction. Serve warm.
