Prepare the Cream
In a saucepan, heat the heavy cream over medium heat. Split the vanilla bean lengthwise and scrape the seeds into the cream, adding the pod as well. Bring to a simmer, then remove from heat and let it steep for about 15 minutes.

Mix Egg Yolks and Sugar
In a mixing bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and thick.

Combine Mixtures
Remove the vanilla pod from the cream and gradually pour the warm cream into the egg yolk mixture, whisking continuously to prevent the eggs from scrambling.

Strain the Mixture
Strain the custard mixture through a fine-mesh sieve into a clean bowl to remove any lumps.

Cool and Chill
Remove the ramekins from the water bath and let them cool to room temperature. Cover with plastic wrap and refrigerate for at least 2 hours, or overnight.

Caramelize the Sugar
Sprinkle a thin layer of brown sugar on top of each custard. Using a kitchen torch, carefully melt the sugar until it forms a crispy caramel crust. If you don't have a torch, place under a broiler for 1-2 minutes, watching closely to avoid burning.

Serve
Let the crème brûlée sit for a couple of minutes to allow the sugar to harden before serving. Enjoy!
