Prepare the Potatoes

Peel and chop the russet potatoes into even-sized chunks. Rinse under cold water to remove excess starch.

Boil the Potatoes

Place the chopped potatoes in a large pot and cover with cold water. Add 1 tsp of salt. Bring to a boil over medium-high heat and then reduce to a simmer. Cook for about 15-20 minutes or until the potatoes are fork-tender.

Drain and Return to Pot

Drain the cooked potatoes and return them to the pot. Allow them to sit for a minute to let off steam.

Mash the Potatoes

Add butter, heavy cream, garlic powder, and black pepper to the potatoes. Use a potato masher or hand mixer to mash until smooth and creamy.

Add Cheese

Stir in the grated sharp cheddar cheese until melted and well combined. Adjust seasoning with additional salt and pepper if needed.

Garnish with chopped chives and serve warm.
