Cooking Instructions

  1. 1

    Sear the Chicken

In a large skillet, heat olive oil over medium-high heat. Season the chicken legs with salt and black pepper. Sear the chicken legs in the skillet for about 5 minutes on each side until golden brown. Remove from the skillet and set aside.

  2. 2

    Sauté the Aromatics

In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Add chopped escarole and cook until wilted, about 3-4 minutes.

  3. 3

    Combine Ingredients

Add the cannellini beans, chicken broth, and fresh thyme to the skillet. Stir to combine, then return the seared chicken legs to the skillet, nestling them into the mixture.

  4. 4

    Braise the Chicken

Bring the mixture to a simmer, then cover the skillet and reduce the heat to low. Cook for about 30-35 minutes until the chicken is cooked through and tender.

  5. 5

    Serve

Serve the braised chicken over the escarole and beans, topped with shaved Parmesan cheese.
