    Prepare the Potatoes

    Peel the russet potatoes and grate them using a box grater or food processor. Place the grated potatoes in a large bowl and rinse under cold water to remove excess starch. Drain well and pat dry with paper towels.

    Prepare the Vegetables

    Finely chop the onion and dice the bell pepper. Mince the garlic cloves. Set aside.

    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of vegetable oil over medium heat. Add the chopped onion and bell pepper, and sauté for 3-4 minutes until softened. Add the minced garlic and cook for an additional minute. Remove the mixture from the skillet and set aside.

    Cook the Hash Browns

    In the same skillet, add the remaining 2 tablespoons of vegetable oil and 2 tablespoons of butter. Once melted and hot, add the grated potatoes in an even layer. Season with salt and black pepper. Cook for about 5-7 minutes without stirring until the bottom is golden brown.

    Combine and Finish Cooking

    Once the bottom is golden, gently flip the hash browns using a spatula. Add the sautéed vegetables on top of the flipped side. If using, sprinkle cheddar cheese and crumbled bacon over the top. Cook for another 5-7 minutes until the other side is golden and the cheese is melted.
