Method

Preparation of Potatoes

  1. 1

    Bake the Potatoes

Preheat your oven to 400°F (200°C). Wash the large potatoes thoroughly, then prick them several times with a fork. Place them directly on the oven rack and bake for 45-60 minutes until tender.

  2. 2

    Cool and Scoop

Once the potatoes are baked, remove them from the oven and let them cool for about 10 minutes. Cut each potato in half lengthwise and scoop out the insides into a bowl, leaving a thin layer of potato on the skin.

Stuffing Preparation

  1. 3

    Cook the Ground Beef

In a skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat if necessary.

  2. 4

    Mix the Filling

In the bowl with the scooped potato, add the cooked ground beef, shredded cheddar cheese, sour cream, chopped green onions, salt, black pepper, garlic powder, and paprika. Mix everything thoroughly until well combined.

Assemble and Bake

  1. 5

    Fill the Potato Skins

Spoon the beef and cheese mixture back into the potato skins, pressing down lightly to pack the filling.

  2. 6

    Final Bake

Place the stuffed potatoes on a baking sheet and return to the oven. Bake for an additional 15-20 minutes until the tops are golden and the cheese is melted.

  3. 7

    Serve

Remove from the oven and let cool slightly. If desired, sprinkle with bacon bits before serving.
