Prepare the Ingredients
Rinse the red beans under cold water and soak them overnight in a large bowl of water. Drain before cooking. Chop the onion, green bell pepper, and celery into small pieces. Mince the garlic cloves. Slice the smoked sausage into rounds.

In a large pot or Dutch oven, heat a tablespoon of oil over medium heat. Add the chopped onion, green bell pepper, and celery. Sauté for about 5 minutes until the vegetables are tender. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

Add the sliced smoked sausage to the pot. Cook for about 5-7 minutes, stirring occasionally, until the sausage is browned.

Add the soaked and drained red beans to the pot, along with the bay leaves, Cajun seasoning, salt, and black pepper. Stir well to combine.

Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 1 hour, stirring occasionally.

While the beans are simmering, cook the white rice according to package instructions, typically using 2 cups of water for every 1 cup of rice. Once cooked, set aside.

Once the beans are tender and the mixture has thickened, remove the bay leaves. Serve the red beans over a bed of white rice, garnishing with chopped green onions if desired.
