    In a large bowl, combine the cubed alligator meat with Cajun seasoning, salt, and black pepper. Toss well to ensure the meat is evenly coated. Let it marinate for at least 30 minutes.

    While the alligator meat is marinating, dice the onion, green bell pepper, and celery. Mince the garlic and set all the vegetables aside.
