    In a medium bowl, crack the eggs and add the milk, salt, and black pepper. Whisk together until well combined and slightly frothy.

    In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Ensure the butter covers the entire surface of the skillet.

Crawfish Filling Preparation

    Cook the Vegetables

    In a separate pan, heat the olive oil over medium heat. Add the diced red bell pepper and minced garlic. Sauté for about 2-3 minutes until the bell pepper is tender.

    Add Crawfish

    Add the crawfish tails and chopped green onions to the pan with the bell pepper. Sprinkle in the paprika, cayenne pepper, and parsley. Stir and cook for another 3-4 minutes until heated through.

Omelet Cooking

    Pour the whisked egg mixture into the skillet with melted butter. Let it cook for about 2 minutes, gently lifting the edges with a spatula to allow uncooked eggs to flow to the bottom.

    Once the eggs are mostly set but still slightly runny on top, add the crawfish filling to one half of the omelet.
