Pork Preparation
- 1
Prepare the Pork
Begin by trimming any excess fat from the pork loin. Cut the pork into 1-inch thick slices and pound each slice to an even thickness using a meat mallet.
- 2
Season the Pork
In a mixing bowl, combine the salt, black pepper, garlic powder, and onion powder. Rub the seasoning mixture evenly over all sides of the pork slices. Let the pork marinate for at least 30 minutes.
Breading
- 3
Set Up Breading Station
In three separate shallow dishes, set up your breading station. In the first dish, place the all-purpose flour. In the second dish, whisk together the eggs and milk until well combined. In the third dish, mix the cornmeal, paprika, and dried thyme.
- 4
Frying
- 5
Heat the Oil
In a large skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of bread into it; if it sizzles and bubbles, the oil is ready.
- 6
Fry the Pork
Carefully add the breaded pork slices to the hot oil, making sure not to overcrowd the pan. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 145°F (63°C).
- 7
Drain and Serve
Once cooked, remove the pork from the skillet and place them on a plate lined with paper towels to drain any excess oil. Serve hot with your choice of sides.
