Method

Prep the Salad

  1. 1

    Wash and Chop Lettuce

Rinse the Romaine lettuce under cold water. Shake off excess water and chop into bite-sized pieces. Place in a large bowl.

  2. 2

    Prepare Vegetables

Slice the cherry tomatoes in half and chop the cucumber into thin slices. Add both to the bowl with the lettuce.

  3. 3

    Add Parmesan Cheese

Grate the Parmesan cheese and sprinkle it over the salad base.

Cook the Chicken

  1. 4

    Season Chicken

In a small bowl, mix olive oil, garlic powder, salt, and black pepper. Rub this mixture all over the chicken breasts.

  2. 5

    Cook Chicken

Heat a grill or skillet over medium-high heat. Cook the chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear. Remove from heat and let it rest for a few minutes.

  3. 6

    Slice Chicken

Once rested, slice the chicken into strips and set aside.

Make the Dressing

  1. 7

    Prepare Ingredients

In a medium bowl, combine mayonnaise, lemon juice, Dijon mustard, anchovy paste, Worcestershire sauce, and minced garlic clove.

  2. 8

    Mix Dressing

Whisk the ingredients together until smooth. Season with salt and black pepper to taste.

Assemble the Salad

  1. 9

    Combine Ingredients

Add the sliced chicken on top of the salad mixture in the bowl. Drizzle the dressing over the salad.

  2. 10

    Add Toppings

Sprinkle croutons and extra Parmesan cheese on top to finish. Toss gently to combine.
