For the Catfish

For the Remoulade Sauce

Method

Preparing the Catfish

  1. 1

    Marinate the Catfish

In a large bowl, pour the buttermilk over the catfish fillets, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour to marinate.

  2. 2

    Prepare the Coating

In a separate bowl, combine cornmeal, all-purpose flour, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Mix well to ensure even distribution of spices.

  3. 3

    Heat the Oil

In a large skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  4. 4

    Coat the Catfish

Remove the catfish fillets from the buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture, pressing lightly to adhere the coating.

  5. 5

    Fry the Catfish

Carefully place the coated catfish fillets into the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Use a slotted spoon to transfer to a paper towel-lined plate to drain.

Making the Remoulade Sauce

  1. 6

    Combine Ingredients

In a medium bowl, mix together the mayonnaise, Dijon mustard, chopped capers, hot sauce, lemon juice, and minced garlic. Stir until well combined.

  2. 7

    Chill the Sauce

Cover the remoulade sauce and refrigerate for at least 30 minutes before serving to allow flavors to meld.
