Egg Roll Filling

Egg Roll Assembly

Method

Prepare the Filling

  1. 1

    Cook the Boudin

Remove the boudin sausage from its casing and crumble it into a skillet. Cook over medium heat for about 5-7 minutes until heated through.

  2. 2

    Mix Ingredients

In a large bowl, combine the cooked boudin, chopped green onions, softened cream cheese, garlic powder, and black pepper. Mix until well combined and set aside.

Assemble the Egg Rolls

  1. 3

    Prepare Work Surface

Lay out the egg roll wrappers on a clean, flat surface. Keep a small bowl of water nearby for sealing the rolls.

  2. 4

    Add Filling

Place about 2 tablespoons of the boudin filling in the center of each egg roll wrapper.

  3. 5

    Roll the Egg Rolls

Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll tightly to seal. Use water to moisten the edges to help seal the rolls.

Fry the Egg Rolls

  1. 6

    Heat Oil

In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

  2. 7

    Fry the Egg Rolls

Carefully place the egg rolls in the hot oil, a few at a time, and fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.
