In a large mixing bowl, combine the boudin sausage, cooked rice, finely chopped green onions, garlic powder, paprika, and black pepper. Mix well until all ingredients are thoroughly combined.

Using wet hands, take a portion of the mixture and form it into a ball about the size of a golf ball. Repeat until all the mixture is used.

Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of bread into it; if it sizzles, the oil is ready.

Fry the Boudin Balls
Carefully place the breaded boudin balls into the hot oil, making sure not to overcrowd the pan. Fry for about 4-5 minutes or until they are golden brown and cooked through, turning occasionally for even cooking.
