Cake Preparation

Preheat Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.

Cream Butter and Sugar
In another bowl, beat the unsalted butter until creamy. Gradually add in the granulated sugar and beat until light and fluffy.

Add Eggs and Vanilla
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Bake the Cake
Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Remove the cakes from the oven and allow them to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

In a medium saucepan, combine the mixed berries, granulated sugar, lemon juice, and cornstarch.

Cook the Filling
Cook over medium heat until the mixture starts to bubble and the berries have released their juices, about 5-7 minutes. Remove from heat and let cool.
Frosting Preparation

Beat Cream Cheese and Butter
In a mixing bowl, beat the cream cheese and unsalted butter together until smooth and creamy.

Gradually add the powdered sugar and mix until smooth. Stir in the vanilla extract.
Assembling the Cake

Layer the Cake
Place one layer of the cake on a serving plate. Spread half of the berry filling over the cake layer.

Spread a layer of frosting over the berry filling. Place the second cake layer on top.

Spread the remaining berry filling over the top of the second cake layer. Decorate with additional fresh berries if desired.
