1. Prepare the Chicken

Preheat your grill to medium-high heat. Using kitchen shears, spatchcock the chicken by cutting along both sides of the backbone and removing it. Flip the chicken over and press down on the breast to flatten it.

2. Season the Chicken

Rub the entire chicken with olive oil, then season generously with salt, black pepper, garlic powder, paprika, and fresh herbs. Ensure the seasoning is well distributed under the skin as well.

3. Grill the Chicken

Place the chicken skin-side up on the grill. Close the lid and grill for about 45-60 minutes, or until the internal temperature reaches 165°F (75°C) in the thickest part of the breast.

4. Rest and Serve

Once cooked, remove the chicken from the grill and let it rest for 10 minutes before carving. Serve with your choice of two sides and drizzle with Charcoal Sauce.
