Cooking Instructions

  1. 1

    Prepare the Chicken

Preheat your grill to medium-high heat (about 375°F). Pat the spatchcocked chicken dry with paper towels. Rub the olive oil all over the chicken, then season generously with salt, black pepper, garlic powder, and paprika.

  2. 2

    Grill the Chicken

Place the chicken on the grill, skin side down. Grill for about 15-20 minutes until the skin is crispy and golden brown. Flip the chicken and continue grilling for another 20-25 minutes, or until the internal temperature reaches 165°F.

  3. 3

    Rest the Chicken

Remove the chicken from the grill and let it rest for 10 minutes before carving. This allows the juices to redistribute.

  4. 4

    Serve

Carve the chicken into quarters and serve with your choice of two sides and a generous drizzle of charcoal sauce.
