    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into even strips, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Drain the soaked potatoes and pat them dry with paper towels. Carefully add a batch of the potatoes to the hot oil and fry for about 5-7 minutes until golden brown and crispy. Remove and drain on paper towels.

    Season the Fries

    While the fries are still hot, sprinkle them with lemon pepper seasoning and salt to taste. Toss gently to coat.

    Serve

    Serve the fries hot with your favorite dipping sauce.
