Chips Preparation

Prepare the Potatoes
Wash and scrub the russet potatoes thoroughly under running water. Pat them dry with a kitchen towel.

Fry the Chips
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Add the potato slices in batches, frying them until golden brown and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.

Season the Chips
While the chips are still warm, sprinkle them with salt to taste.

Layer the Ingredients
On a large oven-safe platter or baking sheet, layer half of the fried potato chips evenly.

Add Cheese and Toppings
Sprinkle half of the shredded cheddar cheese over the chips, followed by half of the jalapeños, cooked bacon, and green onions.

Repeat the Layers
Add the remaining potato chips on top and repeat the layering with the remaining cheese, jalapeños, bacon, and onions.

Melt the Cheese
Preheat your oven to 375°F (190°C). Place the assembled nachos in the oven and bake for about 10-15 minutes, or until the cheese is melted and bubbly.

Serve with Dips
Remove from the oven and serve immediately with sour cream and guacamole on the side.
