Preparation

Mashing

1. Heat Water

In a large mash tun, heat 6 gallons of water to approximately 165°F (74°C).

2. Add Malts

Once the water is heated, add the Pale Malt, Crystal Malt, and Chocolate Malt to the water. Stir well to ensure there are no dry clumps.

3. Mash

Maintain the mash temperature at around 152°F (67°C) for 60 minutes. Stir occasionally.

4. Sparging

After the mash, sparge the grains with hot water (around 170°F or 77°C) to extract the sugars, collecting the wort in a kettle.

Boiling

5. Boil Wort

Bring the collected wort to a boil and add the bittering hops. Boil for 60 minutes.

6. Add Aroma Hops

With 15 minutes remaining in the boil, add the aroma hops.

Cooling and Fermentation

7. Cool Wort

After the boil, cool the wort quickly to around 68°F (20°C) using a wort chiller or an ice bath.

8. Transfer to Fermenter

Transfer the cooled wort to a sanitized fermentation vessel.

9. Pitch Yeast

Sprinkle the ale yeast over the surface of the cooled wort and seal the fermenter.

10. Ferment

Allow the beer to ferment for 1-2 weeks at room temperature, until fermentation activity has ceased.

Bottling

11. Prepare Bottles

Sanitize your bottles and caps in preparation for bottling.

12. Add Priming Sugar

Dissolve the priming sugar in a small amount of boiling water and add it to the bottling bucket.

13. Bottle Beer

Transfer the beer into the bottles, leaving about an inch of headspace at the top.

14. Cap Bottles

Cap the bottles securely and store them in a cool, dark place for carbonation for about 2 weeks.
