Preparation

Brewing the Beer

1. Mash

In a large mash tun, combine the pale malt, caramel malt, and flaked barley with 4 liters of water. Heat the mixture to 153°F (67°C) and maintain this temperature for 60 minutes, stirring occasionally.

2. Sparge

After mashing, sparge the grains with an additional liter of hot water to extract the sugars. Collect the liquid (wort) in a brew kettle.

3. Boil

Bring the wort to a boil and add the Northern Brewer hops. Boil for 60 minutes, stirring occasionally. After 60 minutes, remove from heat.

4. Cool and Ferment

Cool the wort quickly to around 70°F (21°C) using a wort chiller or ice bath. Once cooled, transfer to a fermentation vessel and add the Irish ale yeast. Seal with an airlock.

5. Condition

Allow the beer to ferment for about 2 weeks at a consistent temperature (around 68°F or 20°C).

6. Bottle

After fermentation, dissolve the priming sugar in a small amount of boiled water and add it to the beer. Bottle the beer and cap securely.

7. Carbonate

Store the bottles in a dark place at room temperature for 1 to 2 weeks to allow carbonation.

8. Chill and Serve

Once carbonated, chill the bottles in the refrigerator before serving.

Serving the Irish Red

9. Prepare the Glass

Take a clean pint glass and if desired, garnish with a lemon wedge and mint leaves for a refreshing touch.

10. Pour

Pour the chilled Irish Red beer into the glass, allowing for a slight head to form.

11. Enjoy

Savor the rich, malty flavors of your homemade Irish Red beer.
