Preparing the Fish

Make the Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper.

Combine with Beer
Gradually whisk in the beer until the mixture is smooth and well combined. Let it rest for about 15 minutes.

Heat Oil
Heat the oil in a deep fryer or large pot to 350°F (175°C).

Fry the Fish
Dip each fish fillet into the batter, allowing excess to drip off, and carefully lower them into the hot oil.

Cook Fish
Fry the fish in batches for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.
Preparing the Fries

Prep Potatoes
Peel and cut the potatoes into thick strips. Rinse them in cold water and pat dry with paper towels.

Heat Oil for Fries
Heat the oil in a deep fryer or large pot to 350°F (175°C).

Fry the Potatoes
Fry the potato strips in batches for about 5-7 minutes until they are golden brown and crispy. Remove and drain on paper towels.

Sprinkle with salt to taste while still hot.
Making the Tartar Sauce

Mix Tartar Sauce
In a small bowl, combine the mayonnaise, dill pickles, capers, lemon juice, and chopped dill.

Chill Sauce
Stir until all ingredients are well combined. Refrigerate for at least 30 minutes before serving.
