Prepare the Pot Roast
In a large skillet or pot over medium-high heat, sear the pot roast on all sides until browned. Remove from heat and set aside.

Cook the Pot Roast
In a slow cooker, add the beef broth, sliced onion, minced garlic, salt, and pepper. Place the seared pot roast on top. Cover and cook on low for 8 hours, or until the meat is tender and easily shreds.

Shred the Beef
Once cooked, remove the pot roast from the slow cooker. Shred the beef with two forks and return it to the slow cooker, mixing it with the broth and vegetables.

Add Cheese
Place a generous portion of the shredded beef on each toasted bun, top with shredded cheddar cheese, and cover until the cheese melts.

Serve
Serve the hot beef and cheddar sandwiches immediately, with extra broth on the side if desired.
