Chicken Fried Chicken

Prepare the Chicken
In a mixing bowl, combine buttermilk, egg, salt, and black pepper. Add chicken breasts and marinate for at least 30 minutes.

Bread the Chicken
In a separate bowl, place flour. Remove chicken from marinade and dredge in flour, coating well.

Fry the Chicken
Heat vegetable oil in a large skillet over medium-high heat. Fry the chicken until golden brown and cooked through, about 5-7 minutes per side. Drain on paper towels.
Mashed Potatoes

Cook the Potatoes
Peel and cut potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.

Make the Roux
In the same skillet used for frying chicken, heat 2 tablespoons of oil over medium heat. Whisk in flour and cook until golden, about 2 minutes.

Prepare the Gravy
Gradually add milk while whisking to prevent lumps. Stir in salt, white pepper, and black pepper. Cook until thickened, about 5 minutes.

Steam or sauté green beans until tender but still crisp. Season with salt and pepper to taste.
