Prepare the Filling
In a bowl, mix the shredded corned beef, Swiss cheese, and drained sauerkraut until well combined.

Assemble the Quesadilla
Place a tortilla on a flat surface and spread a quarter of the filling mixture evenly over half of the tortilla. Drizzle with a tablespoon of Thousand Island dressing. Fold the tortilla in half to cover the filling.

Cook the Quesadilla
In a skillet over medium heat, melt 1 tablespoon of butter. Place the folded quesadilla in the skillet and cook for about 3-4 minutes on each side, or until golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.

Serve
Cut each quesadilla into wedges and serve warm with extra Thousand Island dressing on the side for dipping.
