Prepare the Tartar Sauce
In a bowl, combine mayonnaise, finely chopped pickles, lemon juice, capers, and fresh parsley. Mix well and refrigerate until serving.

Prepare the Fries
Peel and cut the potatoes into fries. Soak them in water for about 30 minutes to remove excess starch. Drain and pat dry.

Heat the Oil
In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C).

Make the Batter
In a large bowl, whisk together the flour, cornstarch, baking powder, salt, black pepper, and Irish beer until smooth.

Fry the Fries
Fry the soaked and dried potato fries in the hot oil in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels. Season with salt.

Fry the Fish
Dip each cod fillet into the batter, allowing excess to drip off. Carefully place in the hot oil and fry until golden and cooked through, about 4-6 minutes. Remove and drain on paper towels.

Serve
Serve the fried fish with the crispy fries and a side of house-made tartar sauce.
