    Cook the Pot Roast

    In a slow cooker, season the pot roast with salt and black pepper. Add enough beef broth to cover the meat halfway. Cook on low for 6-8 hours until tender. Once done, slice the pot roast thinly.

    Sauté Vegetables

    In a skillet, heat olive oil over medium heat. Add the sliced bell peppers and mushrooms. Sauté for about 5-7 minutes until softened. Season with salt and pepper as needed.

    Toast the Hoagie Rolls

    Preheat the oven to 350°F (175°C). Slice the hoagie rolls in half and place them on a baking sheet. Toast in the oven for about 5 minutes until lightly golden.

    Assemble the Sandwich

    Layer sliced pot roast on the bottom half of each hoagie roll, add sautéed peppers and mushrooms, and top with Swiss cheese. Place the top half of the roll on the sandwich.

    Serve with Au Jus

    Pour the remaining beef broth into small bowls for dipping. Serve the sandwiches warm with a side of Au Jus.
