    Prepare the Chicken

    Preheat your oven to 350°F (175°C). Rinse the chicken and pat it dry. Season generously with salt and black pepper.

    Sear the Chicken

    In a large Dutch oven or oven-safe pot, heat the olive oil over medium-high heat. Add the chicken, breast side down, and sear until golden brown, about 5-7 minutes. Flip and sear the other side for another 5-7 minutes. Remove the chicken and set it aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5 minutes until they begin to soften. Add the minced garlic and cook for another minute.

    Deglaze the Pot

    If using white wine, pour it into the pot to deglaze, scraping up any browned bits from the bottom. Allow it to simmer for 2-3 minutes.

    Add Broth and Herbs

    Pour in the chicken broth and add the thyme and bay leaves. Stir to combine.

    Braise the Chicken

    Return the chicken to the pot, breast side up. Bring the liquid to a simmer, then cover the pot and transfer it to the preheated oven. Braise for about 1.5 to 2 hours, or until the chicken is cooked through and tender.
