    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Chicken

    Rinse the chicken breasts under cold water and pat them dry with paper towels. Rub each breast with olive oil, then season with salt, black pepper, garlic powder, and thyme.

    Chop the Vegetables and Fruits

    Peel and slice the carrots into small rounds. Cut the red onion into wedges. Core and slice the apples into wedges. Rinse and remove stems from the grapes.

    Roast the Chicken and Vegetables

    In a large roasting pan, combine the carrots, red onion, and pecans. Drizzle with a tablespoon of olive oil and sprinkle with salt and pepper. Place the seasoned chicken breasts on top of the vegetables. Roast in the preheated oven for 25 minutes.

    Add Fruits

    After 25 minutes, add the apple wedges and grapes around the chicken and vegetables. Return the pan to the oven and roast for an additional 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the vegetables are tender.

Serving

    Serve the Dish

    Remove the roasting pan from the oven. Let the chicken rest for about 5 minutes before slicing. Serve the chicken with the roasted carrots, apples, grapes, and pecans on the side.
