Method

Preparing the Salmon and Glaze

    Make the Soy Glaze

    In a small saucepan over medium heat, combine soy sauce, brown sugar, grated ginger, minced garlic, and sesame oil. Stir until the sugar is dissolved and the mixture is well combined. Bring to a simmer and cook for 5-7 minutes until slightly thickened. Remove from heat and set aside.

    Prepare the Salmon

    Preheat a large skillet over medium-high heat. Add a little oil if necessary. Season the salmon fillets with salt and place them skin-side down in the skillet. Cook for 4-5 minutes, then carefully flip the fillets over.

    Braise the Salmon

    Pour the prepared soy glaze over the salmon fillets and lower the heat to medium. Cover the skillet and let the salmon braise for an additional 4-5 minutes, or until the salmon flakes easily with a fork.

Cooking the Ginger Flash Seared Greens

    Sear the Greens

    In a separate pan, heat sesame oil over medium heat. Add minced garlic and ginger, sauté for about 1 minute until fragrant. Add bok choy or kale and stir-fry for 3-4 minutes until just wilted. Season with salt to taste.

Making Garlic Mashed Potatoes

    Prepare the Potatoes

    Peel and chop the potatoes into even-sized chunks. Place them in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook until fork-tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, minced garlic, and milk. Mash until smooth and creamy. Season with salt to taste.
