Preparation of Ingredients

    Prepare the Steak

    Remove the sirloin steak from the refrigerator and let it sit at room temperature for about 30 minutes. This helps it cook evenly.

    Season the Steak

    Rub the steak with salt, black pepper, garlic powder, and paprika on both sides.

    Prepare the Eggs

    Crack the two eggs into a bowl and set aside. You can choose to fry them sunny-side-up or scrambled based on preference.

    Prepare Potatoes or Grits

    If using roasted potatoes, wash and cut them into bite-sized pieces. If using grits, prepare according to package instructions.

    Cook the Steak

    In a skillet over medium-high heat, add 1 tablespoon of butter or oil. Once hot, add the sirloin steak and cook for about 4-5 minutes on each side for medium-rare or until desired doneness. Remove from skillet and let rest for 5 minutes.

    Cook the Eggs

    In the same skillet, add another tablespoon of butter or oil if necessary. Crack the eggs into the skillet and cook them to your preference (about 2-3 minutes for sunny-side-up or 4-5 minutes for scrambled).

    If using roasted potatoes, add them to the skillet after the steak is done and sauté until golden and cooked through. If using grits, prepare as per package instructions until creamy.

    On a plate, place the cooked steak alongside the eggs and your choice of roasted potatoes or grits. Serve with a warm buttermilk biscuit on the side.
