Simmer
Reduce heat to low, cover, and let the grits simmer for about 20-25 minutes, stirring occasionally, until thickened and creamy.

Cooking Eggs and Bacon

Cook the Bacon
In a skillet over medium heat, cook 4 slices of applewood-smoked bacon until crispy, about 6-8 minutes. Remove bacon and let drain on paper towels.

Scramble the Eggs
In a bowl, whisk together 2 large eggs. In the same skillet used for the bacon, pour in the eggs and scramble over medium heat until fully cooked, about 3-4 minutes.

Prepare Toppings
Dice the medium tomato and set aside. Grate or chop the cheddar cheese.
Assembling the Dish

Plate the Grits
Spoon a generous portion of grits onto a plate.

Crumble the crispy bacon over the eggs, followed by the diced tomato and shredded cheddar cheese.
