Preparation of Chimichurri Sauce

    Make Chimichurri Sauce

    In a mixing bowl, combine chopped parsley, cilantro, minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper. Mix well and set aside to let the flavors meld.

French Fries

    Prepare French Fries

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the cut Russet potatoes in batches until golden brown and crispy, about 5-7 minutes per batch. Remove with a slotted spoon and drain on paper towels. Sprinkle salt over fries while still hot.

Cooking the Steak

    Cook Ribeye Steak

    Season each ribeye steak with salt and black pepper on both sides. Heat olive oil in a cast-iron skillet over high heat until shimmering. Add the steaks to the pan and sear for 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Remove from skillet and let rest for 5 minutes before slicing.

Serving

    Plate the Dish

    On a serving plate, arrange slices of ribeye steak next to a generous portion of French fries. Drizzle chimichurri sauce over the steak and serve immediately.
