Method

Preparation

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, combine the all-purpose flour, baking powder, sugar, and salt. Whisk together until evenly mixed.

  2. 2

    Mix Wet Ingredients

In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until well combined.

Cooking

  1. 3

    Combine Mixtures

Create a well in the center of the dry ingredients and pour the wet ingredients into it. Gently stir until just combined; do not overmix. The batter should be slightly lumpy.

  2. 4

    Cook Pancakes

Heat a non-stick skillet or griddle over medium heat. Lightly grease with a bit of butter or oil. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook until golden brown, another 2-3 minutes.

  3. 5

    Serve

Remove pancakes from the skillet and keep warm while you cook the remaining batter. Serve pancakes warm with maple syrup and fresh berries if desired.
