Mini Meatloaf Muffins

    Preheat Oven

    Preheat your oven to 350°F (175°C).

    Mix Ingredients

    In a large bowl, combine the ground beef, breadcrumbs, egg, milk, ketchup, Worcestershire sauce, onion powder, garlic powder, salt, and black pepper. Mix until just combined.

    Form Muffins

    Grease a muffin tin and scoop the meat mixture into each muffin cup, filling each about 3/4 full.

    Bake

    Bake in the preheated oven for 20-25 minutes or until the meatloaf muffins reach an internal temperature of 160°F (70°C).

Caramelized Onions

    Prepare Onions

    While the meatloaf muffins are baking, slice the yellow onion thinly.

    Cook Onions

    In a skillet over medium heat, add the olive oil. Once hot, add the sliced onions. Cook, stirring frequently, for about 15-20 minutes until the onions are soft and caramelized.

Whipped Garlic Potatoes

    Peel and chop the russet potatoes into chunks.

    Place the chopped potatoes in a pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.
