    Prepare the Vegetables

    Wash and chop the fresh spinach, and dice the tomatoes. Slice the grilled onions if not already done, and chop the black olives.

    Cook the Omelet

    In a medium bowl, beat the eggs with the salt and black pepper until well combined. In a non-stick skillet, heat the olive oil over medium heat.

    Add Vegetables

    Once the oil is hot, add the grilled onions and cook for about 2 minutes until they start to soften. Add the fresh spinach and diced tomatoes, and cook until the spinach wilts.

    Pour in Eggs

    Pour the beaten eggs over the cooked vegetables. Gently stir to distribute the vegetables evenly throughout the eggs.

    Add Olives and Feta

    Sprinkle the chopped black olives and crumbled feta cheese on top of the eggs. Cook for about 4-5 minutes, or until the eggs are set around the edges but slightly runny in the center.

    Finish Cooking

    You can cover the skillet with a lid for the last few minutes of cooking to help the top set. Once the omelet is cooked to your liking, gently fold it in half.
