    Wash and Slice the Potatoes

    Start by washing the Russet potatoes thoroughly under cold water to remove any dirt. Using a mandoline slicer or a sharp knife, slice the potatoes very thinly, about 1/16 inch thick. Place the sliced potatoes in a bowl of cold water to prevent browning.

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, pour in the vegetable oil and heat it over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature for accuracy.

    Remove the sliced potatoes from the cold water and pat them dry with paper towels. Carefully add a handful of potato slices to the hot oil, making sure not to overcrowd the pot. Fry the potatoes for 3-4 minutes or until they turn golden brown and crispy.
