Prepare Biscuit Dough
Preheat your oven to 450°F (230°C). In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Whisk together until well mixed.

Cut in Butter
Cut the unsalted butter into small cubes and add to the dry ingredients. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

Add Buttermilk
Make a well in the center of the mixture and pour in the buttermilk. Stir gently until just combined; do not overmix.

Shape Biscuits
Turn the dough onto a floured surface and gently knead it 2-3 times. Pat it into a 1-inch thick circle. Use a biscuit cutter to cut out biscuits.

Bake
Place the biscuits on a baking sheet and bake for 12-15 minutes, or until golden brown.
Eggs and Ham

Cook Country Ham
While the biscuits are baking, cook the country ham slices in a skillet over medium heat until heated through and slightly crispy, about 2-3 minutes per side. Remove from heat and keep warm.

Poach Eggs
In a large pot, bring water to a simmer. Crack each egg into a small bowl and gently slide them into the simmering water. Poach the eggs for about 3-4 minutes, or until the whites are set and the yolks are still runny. Remove with a slotted spoon and drain on a paper towel.
Hollandaise Sauce

Melt Butter
In a small saucepan, melt the unsalted butter over low heat. Once melted, set aside to cool slightly.

Prepare Egg Yolks
In a heatproof bowl, whisk together the egg yolks, lemon juice, and salt. Place the bowl over a pot of simmering water (double boiler method) and whisk continuously until the mixture is pale and slightly thickened.

Combine with Butter
Slowly drizzle in the melted butter while whisking constantly until the sauce is thick and creamy. Stir in cayenne pepper and adjust seasoning as needed.

Assemble the Dish
To assemble, split the baked biscuits in half. Place a slice of country ham on each biscuit half. Top with a poached egg and drizzle with hollandaise sauce. Serve immediately with a side of hash browns, if desired.
