Omelet Preparation

    Prepare the Ingredients

    Crack the eggs into a mixing bowl. Add salt and black pepper. Whisk the ingredients together until well combined and slightly frothy.

    Cook the Meat

    In a non-stick skillet over medium heat, cook the Howardstown sausage or applewood-smoked bacon until browned and cooked through. Remove from heat and let cool slightly before chopping into small pieces.

    Prepare the Skillet

    In the same skillet, reduce the heat to low and melt the butter. Swirl it around to coat the bottom of the pan.

    Cook the Omelet Base

    Pour the whisked eggs into the skillet. Allow it to cook undisturbed for about 2-3 minutes until the edges start to set.

Filling and Finishing

    Add the Fillings

    Once the edges of the omelet are set, sprinkle the cheddar cheese, chopped sausage or bacon, and Uncle Boojie's bourbon bacon jam evenly on one half of the omelet.

    Fold the Omelet

    Using a spatula, gently fold the other half of the omelet over the fillings. Let it cook for an additional 1-2 minutes until the cheese is melted and the omelet is fully cooked.

    Serve

    Slide the omelet onto a plate and serve hot. Optionally garnish with additional bourbon bacon jam or fresh herbs.
