Preparing the Wings

    Seasoning the Wings

    In a large bowl, combine olive oil, salt, black pepper, garlic powder, paprika, and cayenne pepper. Add the chicken wings and toss until they are evenly coated with the spice mixture.

    Prepping the Smoker

    Prepare your smoker according to the manufacturer's instructions. Use hickory wood chips for smoking. Preheat the smoker to 250°F (120°C).

    Smoking the Wings

    Place the seasoned wings on the smoker grate. Smoke the wings for about 1.5 to 2 hours, or until they reach an internal temperature of 165°F (74°C) and the skin is crispy.

    If using buffalo sauce, toss the smoked wings in a bowl with the buffalo sauce until evenly coated.
