Prepare the Tomatoes
Slice the green tomatoes into 1/4 inch thick slices. Place them on a plate and sprinkle with salt. Let sit for 15 minutes to draw out excess moisture.

In three separate shallow bowls, place the all-purpose flour in the first bowl, beat the eggs with milk in the second bowl, and mix cornmeal, salt, black pepper, and cayenne pepper in the third bowl.

Fry the Tomatoes
In a large skillet, heat vegetable oil over medium-high heat. Fry the breaded tomato slices in batches for about 3-4 minutes per side or until golden brown. Transfer to a paper towel-lined plate to drain.
Parmesan Cheese

Sprinkle grated parmesan cheese over the fried green tomatoes while they are still hot, allowing it to melt slightly.
Pimento Cheese

Make Pimento Cheese
In a mixing bowl, combine cream cheese, sharp cheddar cheese, drained pimentos, mayonnaise, garlic powder, and onion powder. Mix until smooth and well combined.

In a small bowl, mix together mayonnaise and Dijon mustard until well combined. Adjust the ratio to taste if necessary.
