Peel and Cut Potatoes
Peel the russet potatoes and cut them into even sticks, about 1/4 inch thick. Place the cut potatoes in a large bowl of cold water to prevent browning.

Let the cut potatoes soak in cold water for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Remove the soaked potatoes from water, and dry them thoroughly using a clean kitchen towel. Working in batches, carefully add the fries to the hot oil. Fry until golden brown, about 4-5 minutes.

Using a slotted spoon, remove the fries from the oil and place them on paper towels to drain excess oil. While still hot, sprinkle with salt, paprika, and garlic powder.
