For the Tomato Gravy

To Prepare the Tomato Gravy

    Cook the Sausage

    In a large skillet over medium heat, add the olive oil. Once hot, add the andouille sausage and cook until browned, about 5-7 minutes.

    Sauté the Vegetables

    Add the chopped bell pepper and grilled onions to the skillet with the sausage. Sauté for another 3-4 minutes until the vegetables are tender.

    Add Tomatoes and Seasoning

    Stir in the diced tomatoes, minced garlic, Cajun seasoning, salt, and black pepper. Bring the mixture to a simmer and let it cook for 10-15 minutes, stirring occasionally until thickened.

To Make the Omelet

    Whisk the Eggs

    In a bowl, whisk together the eggs and milk until well combined and slightly frothy. Season with a pinch of salt and pepper.

    Cook the Omelet

    In a non-stick skillet, melt the butter over medium-high heat. Pour in the egg mixture and let it cook without stirring for about 2-3 minutes until the edges start to set.

    Add Cheese and Finish Cooking

    Once the edges are set, sprinkle the shredded cheddar cheese and chopped green onions over one half of the omelet. Fold the omelet in half and let it cook for another 1-2 minutes until the cheese melts.
