Mousse Preparation

Melt the Chocolate
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let it cool slightly.

Whisk the Eggs
In a separate bowl, whisk the eggs and granulated sugar together until the mixture is pale and fluffy. This should take about 5 minutes.

Combine Mixtures
Gently fold the melted chocolate mixture into the egg mixture. Add the vanilla extract and a pinch of salt, and mix until fully combined.

Chill the Mousse
Divide the mousse mixture into serving cups and refrigerate for at least 3 hours, or until set.
Whipped Cream Preparation

Whip the Cream
In a mixing bowl, pour the heavy cream. Using an electric mixer, beat the cream on medium speed until it begins to thicken.

Add Sugar and Vanilla
Once the cream starts to thicken, add the powdered sugar and vanilla extract. Continue to whip until soft peaks form.

Top the Mousse
Once the mousse has set, remove it from the refrigerator and top each serving with the whipped cream.
