    Prepare the Tortillas

    Cut each corn tortilla into 6 triangles using a sharp knife or kitchen scissors.

    Fry the Chips

    In a large, deep skillet, heat the vegetable oil over medium-high heat. Once the oil is hot, carefully add the tortilla triangles in batches, making sure not to overcrowd the skillet.

    Cook Until Golden

    Fry the tortilla chips for about 2-3 minutes, or until they are golden brown and crispy. Use a slotted spoon to remove them from the oil and drain on paper towels.

    Season

    Sprinkle the fried chips with salt immediately after removing them from the oil. Set aside.

Queso Dip

    Melt the Cheeses

    In a medium saucepan over low heat, combine the Velveeta and cream cheese. Stir occasionally until melted and smooth.

    Add Tomatoes and Onion

    Once the cheeses are melted, add the can of diced tomatoes with green chilies and the chopped onion. Stir to combine.

    Season the Dip

    Add sliced jalapeños, garlic powder, salt, and black pepper to the mixture. Stir well and continue to cook on low heat for about 5-7 minutes, allowing the flavors to meld.

    Once the queso dip is creamy and heated through, remove it from the heat and serve immediately with the tortilla chips.
